Put your caught fish in the chest inside Florian’s house. Bringing fish to Florian and chatting was not enough for the questioner. They confirmed that the missing step was depositing the fish in his house.

What if Florian’s house is locked?
A separate Fall player reported the book-sign building left of Chrys’ house staying locked. Another player recalled a festival closure, but no successful unlock or repair was posted. Keep your current event and door message for a follow-up. The chest solution does not demonstrate how to fix that different access problem.
